A steaming bowl of healthy soup on a cold winter's night -- is there anything better? Try these three delicious recipes for veggie, chicken and noodle soup to boost your body and your mind.

Homemade chicken soup

Whether you're feeling cold to the bone, a little under the weather or just a bit blue, a warm bowl of soup is a great start to help you feel 100 percent again. Try out these easy recipes for vegetable, chicken and noodle soup to boost your health on a wintry evening.

Veggie soup

Serves 6

Ingredients:

  • Olive oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 leeks, sliced
  • 2 celery stalks, sliced
  • 2 zucchinis
  • 2 carrots, sliced
  • 1 capsicum, chopped
  • 400 gram tin of cannellini beans
  • 1 litre vegetable stock
  • Salt and pepper, to taste
  • 1 handful parsley, shredded

Directions:

  1. Warm the oil in a large pot on medium-low heat, then add the onion, garlic and leeks.
  2. Add the celery, zucchini, carrots and capsicum and fry for a few minutes.
  3. Add the beans and stock, bring to the boil, then cover the pot, reduce the heat and let simmer for about 20 minutes or until veggies are soft.
  4. Season with salt and pepper and garnish with parsley to serve.

Chicken soup

Serves 5

Ingredients:

  • Olive oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 leeks, sliced
  • 2 teaspoons ginger, grated finely
  • 150 grams mushrooms, chopped
  • 10 baby carrots, peeled and quartered
  • 150 grams sugar snap peas, trimmed and halved
  • 400 grams chicken breast, sliced
  • 1 litre chicken stock
  • Salt and pepper, to taste

Directions:

  1. Warm the oil in a large pot on medium-low heat, then add the onion, garlic and leeks.
  2. Add the ginger, mushrooms, carrots, peas, chicken and stock.
  3. Bring to the boil, then cover the pot, reduce the heat and let simmer for about 20 minutes or until the chicken is cooked. Keep an eye on the soup and add more stock if necessary.
  4. Season with salt and pepper to serve.

Noodle soup

Serves 5

Ingredients:

  • 1 litre vegetable stock
  • Bok choy
  • 10 baby carrots, peeled and quartered
  • Handful of beans, trimmed and halved
  • 150 grams mushrooms, chopped
  • 400 grams soba noodles
  • Chilli flakes, to taste
  • Soy sauce, to taste

Directions:

  1. Bring the stock to the boil in a large pot.
  2. Add the bok choy, carrots, beans and mushrooms, then cover the pot, reduce the heat and let simmer for about 20 minutes or until veggies are soft.
  3. Meanwhile, prepare the noodles as per the instructions on the back of the packet.
  4. Add the cooked noodles to the soup, season with chilli and soy sauce to taste, and let simmer for another few minutes.
  5. Serve immediately.
